Buffalo Chicken Salad

Every time I make this salad for family or friends, they fall in love and want the recipe. Let me tell you, I still have yet to have someone tell me that they don't like it. Even my ex learned how to make it before we parted ways haha, I feel like I was ripped off. I promise you that the blue cheese is very mild on this recipe. It really balances with the heat. Give it a try before you knock it off. You also can just replace it with more cheddar. I usually make the ranch from scratch which makes the recipe more unique but in here you can use just about any ranch you like. After all it's you who will eat it.

Yields enough for 4 people


For The Salad:

  • Chopped romaine lettuce 8 cups

  • Shredded Carrots 1 cup

  • Diced celery 1/2 cup

  • Grilled Chicken, Chopped 2 breast

  • Shredded Cheddar 1/2 cup

  • Crumbled Blue Cheese 1/4 cup

  • Croutons 1 cup


for the dressing:

  • Ranch 1/3 cup

  • Buffalo Sauce 1/4-1/8 cup

  • Kosher salt 1/8 tsp (pinch)

  • Ground Black Pepper 1/8 tsp (pinch)


Step 1 : To make the dressing, combine ranch, buffalo sauce, kosher salt and ground black pepper. Whisk and set aside. You can add as much as you want to the salad. I recommend tossing it with half of the dressing first. You can also add as much hot sauce depending how spicy you like it.


Step 2 : You can cook the chicken breast any way you want. Personally I love the grilled flavor and season it with salt and pepper. Let it cook completely before slicing to keep the juices in the meat. In a bowl add the chopped lettuce, shredded carrots, diced celery, cheddar, blue cheese, croutons and chopped cool chicken. I like to save a bit on the side for topping. Then toss and top with left over ingredients. Also you can drizzle more of the dressing and hot sauce on top. Serve chilled.
