My favorite go to burger. I only did this as my first official Facebook live and it was a success. The main ingredient in this burger is a special spicy korean paste called "Gochugang" you can buy the spicy paste at an Asian market but you want to get the prepared gochugang sauce. It's available at my target. It's prepared almost like a spicy bbq with rice wine and the chilis. If you cant find it, simply use a sweet bbq and add your favorite chili paste to it.
Servings about 4 good size burgers or 6 thinner ones
Ingredients :
Korean Slaw
Mayonnaise 1/2 cup
Gochugang sauce 1/4 cup
Garlic, minced 1 clove
Honey (or sugar) 1 tsp
Red Cabbage, shredded 2 cups
Green onion (scallion) 2 each
Salt 1/4 tsp or To taste
Toppings
Red onions sliced for garnish
Pickled ginger as needed
For the Sauce
Garlic, minced 3 cloves
Canola oil 2 tbsp
Brown sugar 1/2 cup
Soy sauce 1/2 cup
Rice vinegar 3 tbsp
Gochugang sauce 3 tbsp
for the burger
Brioche buns 4 each
Ground beef (80% lean) 1 1/2 lbs
Salt To taste
Black pepper, ground To taste
Step 1 : Set a griddle or pan on medium heat and add a little oil for searing the burgers. In a bowl add the ground beef and add salt and pepper to taste. I would do about 2 tsp of salt and 1 tsp of black pepper. Mix with your hand until combined but don't over mix it. Divide the meat into 4 or 6 portion sized, its up to you. If you do 4 you will get a nice big bulky burger, if you do 6 you will get thinner regular burgers. Use your hands to cut the meat and divide it. Shape into patties using both hands and lay them on the hot griddle or pan. Cook for about 6-8 minutes if you made thin burgers or 12-14 minutes if you made thicker ones. Cook til the desired degree or insert a thermometer and let it register 160 F. While the burgers cook, prepare the sauce and slaw. When the burgers are done cooking, set them aside covered with foil until ready to assemble.
Step 2 : For the slaw make sure you shred your cabbage using a knife. Cut into thin strips and place in a large bowl. Then finely chop one clove of garlic and add that to the same bowl along with the mayonnaise, gochugang sauce, honey or sugar, salt and sliced green onions. Mix with tongues and set aside
Step 3 : Now to make the sauce finely dice the garlic and add it to a medium size bow. This allows room for whisking. Then add canola oil, brown sugar, soy sauce, rice vinegar, and gochugang sauce. Use a whisk and mix until emulsified.
Step 4 : Finally cut the red onion into thin rings and drain some of your pickled ginger. To assemble, grab the bottom burger bun and add the meat, drizzle some of the sauce, then add a sliced onion and some ginger pieces (like if it was pickles, add as many as you want) and finally top with the korean slaw and top bun.
